Salmon or Trout Caviar with Edamame Spaghetti (or Zucchini Noodles) and Seafood

INGREDIENTS

for 4 servings

For the spaghetti

Edamame spaghetti (or zucchini noodles if edamame is unavailable) 200 g
Olive oil 2 tbsp
Salt to taste

 

For the seafood

Mixed seafood (shrimp, squid, mussels) 200 g
Garlic cloves 2
Lemon juice 1 tsp
Salt and pepper to taste
Olive oil 1 tbsp

 

For serving

Salmon or trout caviar 100 g
Fresh herbs (dill, parsley) for garnish
Lemon wedges for serving

 

METHOD

1. Prepare the edamame spaghetti or zucchini noodles:
- If using edamame spaghetti: Bring a large pot of water to a boil, add salt. Cook the spaghetti according to the package instructions (usually 4–6 minutes). Drain, reserving a little water for the sauce. Add olive oil and toss to prevent sticking.
- If using zucchini noodles: Use a spiralizer or vegetable peeler to create long "noodles." Sauté them in a pan with 1 tbsp olive oil over medium heat for 2–3 minutes until tender but still crisp.

2. Prepare the seafood:
- Heat a skillet over medium heat, add olive oil.
- Sauté the minced garlic until fragrant (about 1 minute).
- Add the seafood, salt, pepper, and lemon juice. Cook for 3–5 minutes until the seafood is tender and cooked through. Avoid overcooking to keep it juicy.

3. Assemble the dish:
- Place a portion of edamame spaghetti or zucchini noodles on serving plates.
- Top with the cooked seafood.
- Add salmon or trout caviar.
- Sprinkle with fresh herbs (dill, parsley).

4. Serving:
- Garnish the dish with lemon wedges and serve immediately.

Notes:
- Using edamame spaghetti or zucchini noodles makes the dish healthier, low-calorie, and rich in fiber, vitamins, and minerals.
- For a richer flavor, you can add a splash of white wine or tomato sauce to the seafood.
- If the caviar is too salty, rinse it in cold water and pat dry before using.
